The new year is upon us, and without sounding too lame I’m really excited for a fresh start and embracing all the things this coming year has to offer. The beginning of a new year is always filled with such happiness and hope, and it’s hard not to be enthusiastic about making positive changes. For me, that means getting back to regular blogging (apologies for the end of 2015 being very quiet on the blogging front and thanks for sticking with me!) and making nutrition and cooking an even bigger part of my life.
Most people love to make health and fitness resolutions at the beginning of the year, embarking on various 21-day/8 week/3 month challenges in an effort lose weight. While I’m all about getting fit and healthy, what I am definitely not about is staunchly giving up all the foods that you love for the sake of dropping some kilos; this is neither realistic nor sustainable. Start small by adding more vegetables into your daily diet and switching from refined to wholegrain carbs – little changes like this are both healthy and maintainable, and won’t make you feel like healthy eating is something to be endured. So for all those on a health kick I’ve created a recipe to satisfy your sweet tooth without breaking the calorie budget – mixed berry scrolls with vanilla cream cheese frosting.
The wholemeal dough is filled with a fresh, low-sugar berry chia jam and topped with extra light cream cheese flavoured with vanilla and maple syrup. They’re not overly sweet and the combination of berries and cream cheese is flavour heaven in my eyes - like a cheesecake slathered on a fluffy yeast bun. *Drooooooooool* The recipe can be cut into as many scrolls as you like; I would suggest 9 large or 12 smaller. Like all home-baked goods they are best eaten on the day they are made, as they don’t contain commercial preservatives to keep the dough soft. They would also freeze well before adding the icing, simply allow them to cool then wrap tightly in cling wrap. You could reheat them in the microwave and slather them in freshly-made frosting. Cue more drooling.

Mixed Berry Scrolls with Cream Cheese Icing
Makes 9 larger or 12 smaller
Mixed Berry Scrolls
1 cup milk
1/4 cup butter
1/4 cup coconut sugar
1/2 teaspoon salt
1 sachet (7.5g) instant yeast
3 cups wholemeal flour
1 1/2 cups mixed berries (I used strawberries and frozen raspberries)
2 tbsp coconut sugar
2 tsp cornflour
1 tsp chia seeds
Cream Cheese Icing
200g extra light cream cheese
1 tsp pure vanilla bean paste
1/3 cup maple syrup
