Avocados can be a difficult fruit.
"Not yet. Not yet. Not yet. Not yet. Not yet. Eat me now. Too late." - Avocados. Those delicious, crafty buggers...but any avocado lover will understand the pure, unadulterated joy of opening a perfectly ripe avocado. Not too soft, not too firm, just buttery green happiness.
If you're anything like me and buy a bag of avocados but sometimes struggle to eat them before they all go brown (because I feel like maybe I should do something more inspired than avo on toast 16 breakfasts in a row) then I have the perfect recipe for you - chunky guacamole salad.
I love avocados, and two of the saddest days of my life were when my daughter 1) realised that avocados were delicious and 2) discovered my secret avocado-hiding spot in the fridge. Sharing is caring, but not when it comes to my avocado.
Tomatoes are also in season and so this salad is a celebration of summer. It's also really easy to make and a crowd-pleaser, at least for anyone that likes avocado. And, if we're being honest, anyone that doesn't like avocado doesn't deserve to have their opinion heard. Sorry husband.

A summer BBQ winner or simple side for grilled meat/fish/tofu, chunky guacamole salad is a salad for avocado lovers.
Chunky Guacamole Salad
2 large avocados
6 medium ripe tomatoes
1/2 red onion, thinly sliced
Juice of 2 limes
1-2 tbsp olive oil
1/2 cup finely chopped fresh coriander
1) Halve, de-seed and slice avocados. Slice each tomato into eighths.
2) Arrange avocado, tomato and onion on a large platter.
3) To make dressing combine equal parts lime juice and olive oil, chopped coriander and salt and pepper to taste in a small bowl. Stir and pour over salad.
