Beetroot Tzatkziki = Beetziki. It's a thing, right?
Y'all know I love smushing words together (for example, see previous posts for felafelushi and enchilasange) and beetziki has now been added to the list of delicious recipes with made-up words for titles. And it really is delicious. And pretty. And healthy. Triple win!
The recipe takes the basic premise of tzatziki but replaces cucumber with beetroot. Not only is it pretty as a picture but beetroot is sort of sweet and earthy and marries so beautifully with tangy yoghurt, zingy dill and sharp lemon. You can use tinned beetroot, vacuum sealed beetroot or roasted fresh beetroot - whatever is easier/cheaper.

The most important step is the initial blending - make sure you make a smooth beetroot puree before you add the yoghurt. I tried adding both at the same time and the yoghurt never incorporated properly, although maybe that's just an issue with the quality of my food processor. The dill, garlic and lemon zest can all be increased (or decreased I suppose) to suit your taste.
This recipe is also a hit with kids who, in my experience, love most food that's brightly coloured. My not-so-baby girl loves to eat it with veggie sticks and crackers as an afternoon snack. It's also a great way to sneak in extra veggies in the form of generally-underused-but-totally-delicious-when-prepared-correctly beetroot. With summer rapidly approaching it's perfect for a summer entertaining platter too. Beetziki takes a winter vegetable and turns it into a super summer dip.
1 x 450g tin of beetroot
1/4 cup greek yoghurt
2 cloves of garlic, crushed
1/2 bunch of fresh dill
Juice of half a lemon
Salt and Pepper
1) Drain beetroot and puree until smooth.
2) Add remaining ingredients and blend until fully incorporated.
